Here is how I did it...
1) Open up the V8 Scan and Tune software,
2) Click on BBL,
3) Select the PIDs you want logged on your controller,
4) Once you have all your PIDs selected you can right click on them and click properties,
5) You should see a 'custom' section,
6) Select the imperial unit you want the PID to be displayed and logged as
7) FYI: You can toggle between metric and custom by pressing 'enter' on your V2 unit
Good luck

FYI
After alog is loaded with the scan.exe
you can toggle between units in the PIDS tab.
It does not make a difference in the maps you have loaded either.
Selecting metric or imperial for logged PIDs will show those units on the data tab.
Your map that is linked to a PID in metric will show data
even tho you have selected imperial units on the PIDS tab.

Can someone look at my Options.txt file tell me if you can see why I can't select imperial units?
Thanks in advance, Vinny

did you load the file w/ the -1 or you edited the name of file, after that make sure you have all up to date firmware and also did you install 8.1 correctly by deleting the old files and stuff because i did it w/o deleting files and thats what happened to me, you should be able to press enter and change to imperial.
