how would a car with a bad map sensor run?

It can run, but quite badly, or possibly not at all... it will be either too rich or too lean because the PCM won't be able to calculate the correct airmass.

This is the calculation of cylinder airmass from MAF: airmass[g] = MAF[g/s] * DAT[K] * 15 / (RPM[rev/min] * MAP[kPa])

The PCM would use a similar equation.
