Hi, how to install e-fans with 160 degrees thermostat?

Yea, ? , exactly what I was thinking reading your title and post.
Installing a 160* stat is a mechanical function you do with wrenches.
Now you already have e-fans and want to know where to set your efans ON and OFF with a 160* stat?
Please clarify so we can help u

I have efans with original thermostat i think it's 210 degrees.

orig thermostat is 190 but wont fully open until around 200. Thats why u will run hotter normal eng temps.
Install a 185 stat IMO unless ur in a very hot climate.
You should be able to adjust the fan turn on setting with EFI Live. Not sure where to direct you in turning them on. According to your posted pic they are on quire low...which is odd to me. Is that stock setings?

I don't know about e-fans as used on the trucks...

but with the cars (series/parallel low/high speed fans), with a 160F TS you would set the low speed fan (Fan 1) on at 180F and off at 170F, and high speed fan (Fan 2) on at 190F and off at 180F.
