Has anyone tried to build frequency to voltage converter for a maf through analog input?

No. But I built a carPC that had them for the tach and speedometer. What are you trying to do? Double check airflow on a SD vehicle?

The idea I have is to be able to datalog raw maf hertz on vehicles that didn't support that pid
