I have a 2000 C5 and descreened the MAF before realizing it wasn't the best thing to do. Has anyone done the same and rescaled the MAF table dead-on? What did you end up with?

Yes use the 2002 maf table and tweak it a bit here and there....
follow the regression you should be ok.

I installed a Granatelli MAF on my '02 silverado. While it didnt set a code it was adding 20+% on the LTFTs.. One of the members here helped me out and told me to get it close (within 5%) then I tweaked it in with the VE table. Now the most its adding is 2% at WOT and my Silverado feels like a completely different vehicle..h

I'm actually seeing LTFT's within 5% of 0 right now but am wanting to make sure I'm not correcting an incorrect MAF scale somewhere else.

One thing not pointed out was that this is on an LS1 which uses a 75mm MAF. Will the 2002 table still be useable?

The easiest way to get the ltrims in check is with the IFR table. although its not the "correct" way to do it.. its quite fast and tuning is tuning be it different methods... i always use the VE, but in extreme circumstances i use the inj.
