can I program 02020005 into my ECM and then do a calibration only reflash from COS3 to get started? Or, I have a good working COS5 tune from another car. Can I do a full reflash using this file after I have modified it with my fuel map and commanded AFR?

Last, is there a tutorial just for COx to COS5?

You should be able to.

Or you could open 02020005 as the calibration and 02020003 as the alternate, and then do (in this order):
- copy all the non-engine segments,
- click on the Show Differences, highlight all the differences, click Update,
- check for out-of-range values (check also in the custom segment) and fix them,
- save file,
- do full flash,
- read flash to new file and compare.

I mainly need this system for the Juice, but i am going to use the alpha N for just my idle segments. 50 60 on map and 800 to 1200 RPM. Everything else is dead on.
