Create a map that mimics the LTFT matrix displayed by the Scan Tool (in menu option: "LS1/LS6->Longterm fuel trim cells" for your vehicle. See attached image for an example. I have also attached the MAP definition for the map shown in the image.
You could log both banks individually, or you could create a calculated PID that averages both banks together and log the average in a single MAP.
To map your AFR you will need a wide band O2 sensor.
