As far as I know, to convert to cable TB, you would have to swap computer and loom over from a cable TB engine.
I have not seen any posts on anyone getting ls2 style knock sensors to successfully work with ls1 pcm.

If you have rich decal , you should install the Transient fuel Cax file, which will give you Table B9021 (minimum Transient pulse width) > have mine set at 0.592722

Sort your Knock sensor code first, ie replace sensors.
I wouldn't call 27 degrees @4000 rpm mild, depends on engine specs, but most bolt on or cam combos wouldn't take any more timing than that.
I've done one for a boat, use a manual calibration. If a factory cam is used it will run fine without VSS.

Fuel pressure should should not drop at all, I suspect you have reached the limit of your fuel system.
