Default Tuning CUSTOM E40 ECM boost VE table with lesser injectors!

Hi, very new to efilive, have purchased the v2 unit and have been reading the forum pro furiously
Months now .Trying to gain enough exp and knowledge to make my own adjustments :Eyecrazy. My tune
Was done professionally several years ago made over 1000 rwhp S /C with the suited injectors at that hp. Currently now the vehicle is de- tuned with a s/c air intake restriction and smaller injectors ,maffles, open loop Sd tune .Now reading efilive posts and looking at most tune files on forum I notice that VE tables usually increase air as map and rpm increase . Looking at my table I note that at the higher map /rpm areas my table values
Become lesser. Would this be due to having smaller injectors that would run out at higher boost levels?
Can you trick the ECM by scaling down the V/E table when you have not enough injector flow at high Rpm.
My objective would be to change injectors , re- do VE , timing and so on
