In the case of a MAF/IAT you need to modify the cable to only remove the MAF signal to the PCM leaving the IAT lines intact in the connector. I think the process is outlined in the E38-VVE Set-up Guide.

Yer I know this method but I have completely removed the whole Maf sensor can a iat be installed from a ls1 by using the plug and sensor from a ls1 and grafting it into the e40 harness
Just wire in an LS1 style sensor to the existing loom. Many have don this, but I don't have the details ATM.
You need PN 12160244, Sensor Intake Air Temp.
Also PN 12110620 Connector, Sensor Int Air.
You then need to cut a hole in your maf-pipe slightly larger than the sensor, fit a grommet* and dab it with detergent or swarfega and push the IAT sensor into it with the relevant wires connected.
If you have a GTS maf-pipe the hole's already there.
* I used a 2001-2004 LS1 coolant header tank mounting grommet (same is used to mount the air filter box too on these cars).
