On my buddies car all the IAC values(and probably other values) were already inserted all we did was click the Y/N option IIRC for DBW and it worked just fine. This was a different PCM with some random azz cal we found online though so who knows what it was lol
I do have a 2000 tahoe and I've been meaning to do the exact same thing since I have a lisenced pcm sitting in a drawer in my garage but I've been lazy lol
You may find a 2002 tahoe/yukon cal that is already set up for DBC since Taz stated they came both ways. Friend has an 02 Yuk 5.3 and I'm pretty sure it's DBC I'll have to find out :shrug:
But anyways I would definitely try turning off DBW and see what happens.
Switch to OS 12212156 and pick a tune that has DBC. I dont know exactly which table/params make it easy to identify a DBC vs DBW tune offhand.
Look at TuneFileDepot, there are tons of 12212156 files. Pick one from a Silverado, Tahoe, Suburban, or Yukon that uses a V8 and DBC.

2002 Chevy TrailBlazer LT 4X4 Summit White - 4.2L I6 P10, lifted, wheels, etc.
That yukon was a DBC, didn't do anything to the tune other than change the serial # on the vin. But here you go, hope this helps OS 12212156 .
Summary for anyone reading along:
for 512K LS1B when possible, choose a 12212156 file with matching throttle (DBC or DBW) and matching transmission (4L60E or 4L80E).

If I was at my laptop to look I could tell you where. Under vin or permissions or whatever it will say what transmission. I can't remember where but it tells you what type of throttle it has, says f-bofy, y-body etc and shows tb(under system or something like that).
In the transmission segment there is a table for the gear ratios:
- 3.06, 1.63, 1.00, 0.70 -> indicates 4L60E,
- 2.48, 1.48, 1.00, 0.75 -> indicates 4L80E.
Shift pressure tables: if these have an immediate sharp jump up to max pressure, then it's probably a manual transmission,
In the System segment look at G1206 and G1207 to see indication of DBW (what picnic_george said).
